Beef
with Broccoli Stir Fry
¾
lb lean beef
Marinade:
1
T. rice vinegar
1
tsp. sugar
1
tsp. soy sauce
1
T. water
1
T. cornstarch
Slice
beef (sirloin steak or London broil)very very thin. Pound with a meat pounder. Drench in marinade for at least 30 minutes.
Sauce:
1
½ T. fish sauce (or oyster sauce)

T. soy sauce
1
T. water
Thickener:
1
tsp. cornstarch
1
T. water
1
pound fresh broccoli
minced
garlic
oil
Heat
the wok. Add 1 cup of oil. When the oil is medium-hot, add the
beef. Blanch beef by letting it lay flat
for 30-40 seconds and then stir to separate pieces. Remove the beef when in changes color and is
nearly cooked. (The entire process takes
about 1-2 minutes.)
Clean
out wok with paper towels. Add 2
tablespoons oil, add crushed garlic, broccoli and sprinkle with ½ tsp sugar, ½
tsp salt. Add ½ cup water.
Cover
broccoli and cook for 5 minutes. Remove
from wok.
Clean
out wok with paper towels. Add 2
tablespoons oil, broccoli and the beef.
Add sauce and thickener. Stir
everything together until combined thick, and hot.
