Crab Wontons



8 oz cream cheese
12 oz imitation crab meat
3 T. chopped green onion
dash of salt
dash of pepper
won ton wrappers

Mix all ingredients together with an electric blender except wrappers.  Put about 1 T. mixture into wrapper, seal sides in a pyramid fashion by bringing each corner to meet the opposite in the center.  

Seal wrap with 1 egg, beaten with 1 tsp water.  Deep fry or pan fry in very hot oil until crispy brown. 

Egg Rolls



2 cups leftover chicken or pork, shredded
2 garlic cloves, minced
2 T. hoisin sauce
2 T. soy sauce
8 oz mushrooms
3 green onions, chopped
3 carrots, shredded
2 sticks of celery, shredded
2 cups bean sprouts or more
1 head napa cabbage (avoid the white kind, it can be bitter)

Stir fry meat with garlic in oil.  Add hoisin sauce and soy sauce.  Remove from pan.  Add a little more oil.  Stir fry vegetable mixture except cabbage with a dash of soy sauce for about 10 minutes or until vegetables are slightly tender. Add cabbage last and sauté a few minutes more.  Return meat mixture to pan.  Add more sauces if necessary. 


Put about 2 T. mixture into egg roll wrap, roll up.  Seal wrap with 1 egg, beaten with 1 tsp water.  Deep fry or pan fry in very hot oil until crispy brown. 

Dill Bread or Rolls


Dill Bread or Rolls

2 cups small curd cottage cheese
2 T. butter
2 T. yeast
2   Eggs
2 T. dried onion
1 T. Dill weed
1 tsp. salt
½ tsp. baking soda
¼ cup sugar
4 ½ - 5 cups flour

Heat corrage cheese with butter until warm.  Add the rest of the ingredients but only half the flour; mix 1 minute.  Add enough of the remaining flour to make a soft dough.  Knead 4-5 minutes until smooth.


Let rise until doubled.

Form into 2 loaves or rolls.  Let rise until doubled.


Bake at 350; loaves for 20-25 minutes, rolls for 15 minutes. 

Chicken & Broccoli Alfredo

Campbell’s Soup Recipe

½ of a 16 oz. package linguine
1 cup fresh or frozen broccoli
2 T. butter
1 lb. skinless, boneless chicken breast, cut into 1 ½’’ pieces
1 can Cream of Mushroom Soup
½ cup milk
½ cup grated parmesan cheese
¼ tsp. ground pepper

Prepare linguine according to package directions.  Add broccoli during the last 4 minutes of cooking time.  Drain linguine and broccoli in colander.
Heat butter in a skillet over medium high heat.  Add chicken and cook until well browned. 
Stir soup, milk, cheese, black pepper and linguine mixture into skillet.  Cook until mixture is hot and bubbling.  Serve with additional parmesan cheese. 


Options: substitute grilled chicken.  Substitute shrimp for chicken.

Hearty Chicken & Noodle Casserole


1 can cream of mushroom soup
½ cup milk
¼ tsp. ground black pepper
¼ cup parmesan cheese
1 cup frozen mixed vegetables
2 cups cubed cooked chicken
2 cups medium egg noodles, cooked
½ cup shredded cheddar cheese

Stir soup, milk, pepper, Parmesan cheese, vegetables, chicken and noddles in a large casserole dish.  Bake at 400 for 25 minutes or until hot.  Stir.  Top with cheddar cheese.


Amazing options:  Omit cheese and use ½ cup French fried onions instead.  Use 2 cups cooked spinach corkscrew pasta for noodles.
